Angela is absolutely right, Cajun cooking is fabulous, and Andouille sausage is near the top of the Louisiana food pyramid. I suspect Angela is an excellent Cajun chef and it would wonderful to have a homemade lunch with her (hint!). I would provide the Chardonnay,

Never been to an authentic plantation, and reading this article makes me want to visit one.  Culture should be preserved. I think Laura Plantation is near NOLA and I will make it a point to visit next trip there.
