Courchevel's Famed Chalet de Pierres Restaurant Returns after
a Five Million Euro Renovation and the Addition of a New Chanel Boutique
Chef Mathias Dandine is
Appointed and Debuts a French Regional Menu
Courchevel, France (January 18, 2011) - The Chalet de Pierres returns to
the illustrious Courchevel 1850 gastronomic landscape with the
commencement of the 2010/11winter season. The owners and operators of
the world-renowned Hotel de Charme Les Airelles recently acquired the
restaurant and invested more than five million Euro into its renovation,
updated the interiors, terrace, appointed the renowned Chef Mathias
Dandine and debuted the first-ever 'en piste' Chanel Boutique.
Situated just steps from the Verdons ski run, this enchanting slope-side
restaurant is set to become the premiere hotspot on the Alps. The new
design features stonework from the former Maurienne train station, a
slate tile roof, finely worked pine balustrades and a sprawling terrace.
Designer Christophe Tollemer, who spearheaded the renovation at Les
Airelles, lent his artistry and vision to the transformation. He paid
great attention to the modernization of the restaurant, but kept the
legendary spirit alive. The chalet features a grand fireplace, quiet
corners, a cozy bar area, and an extended terrace with ice rink
decorated with antique furniture and artwork.
Chef Mathias Dandine, formerly of the Michelin-starred Hotel des Roches
restaurant on the French Riviera, created a menu of traditional French
specialties incorporating regional produce and meats. Chef Dandine will
also make use of the classic bread ovens built into the stone structure,
serving freshly baked breads, cakes and pastries daily to the restaurant
and Hotel de Charme Les Airelles.
"The restaurant exudes a warm and authentic spirit reflected in the
regional menu, and we will continue signature items such as the famous
dessert buffet, the Beaufort Pie, and freshly baked goods made
on-premises," said Chef Dandine.
No restaurant is complete without its own Chanel boutique. Conveniently
located at the entrance of the Chalet de Pierres, the famed fashion
house opens an outpost featuring fur boots, cozy knits, signature
handbags and fab cold weather gear.
Other unique amenities include all-terrain Land Rover car transfers to
the restaurant and a 200 square-meter ice rink built into the
restaurant's terrace, reserved exclusively for clients of the Chalet de
Pierres.
Chalet de Pierres will be managed by Eric Adam, who has seven years
experience at the Alain Ducasse Restaurant at the Hostellerie de
l'Abbaye de la Celle in the South of France. The restaurant can
comfortably seat up to 800 guests and is the perfect midday lunch stop
for those in the know. The restaurant is open for lunch Monday through
